A refreshing and easy Mint Lemonade recipe to enjoy during spring and summer months. Made with fresh lemons and mint, this simple lemonade is blended to perfection and comes together in just 5 minutes or less!

I bought a whole bunch of lemons when I recently made my Vegan Lemon Drizzle Cake, and I had extra mint leaves from garnishing the cake. I was in such a lemony mood! As soon as the weather gets slightly warmer I want to make fresh lemon recipes. 🙂 This led me to create this oh-so-refreshing Mint Lemonade.
Lemonade is delicious as is, but the mint adds an elevated luxuriousness to it! It feels like a grown up version of lemonade.

Ingredients

- Lemons: You'll need 6 lemons, juiced. Save 2 juiced halves (or one juiced lemon). Make sure you have extra lemon slices for garnishing!
- Filtered water
- Ice
- Sugar: I use raw organic cane sugar.
- Fresh mint: You'll need 20-30 mint leaves (or about one bunch) plus extra leaves for garnish!
How to Make Mint Lemonade
1. Add ingredients to blender. Add lemon juice, two lemon halves (or one juiced lemon), filtered water, ice, sugar, and mint leaves to blender.


2. Blend. Blend on high, for about a minute, until smooth.


3. Transfer to pitcher. Pour into a pitcher, adding a couple lemon slices or mint leaves. They'll look so pretty!
4. Serve. Serve over ice with a lemon slice and mint leaf for garnish!

Chef Tips
- Dilute with water. I tried this recipe several times to get that perfect balance of tartness and sweetness without being overpowering, and being primarily refreshing...however, if it is still too sweet, or you want a very low-sugar beverage, you can simply pour a little in a glass and top mostly with water! Sometimes I prefer it this way as a glass of water with a lemonade top off.
- Use a fine mesh strainer. If you don't have a high speed blender, you may notice small pieces of mint leaves or lemon rind. Pour the lemonade through a fine mesh strainer as you add it to the pitcher to remove those pieces.
- Reduce the water. If you wish to create a more concentrated flavor to mix with sparkling water, iced tea, vodka, or sparkling wine, reduce to about 4 cups. This will be too sweet/tart on its own, but goes great when mixed with something else!
Recipe Variations
- Add more fruit! Get creative and add any summer fruit to the blender that you like! Any type of melon works great here.
- Serve with sparkling water. Reduce the water by a cup or so when blending the lemonade, then serve with sparkling water.
- Add ginger. A little fresh ginger adds a healthy twist and little kick!
- Make mint lemonade ice cubes! Reduce the water to 4 cups, blend, and pour into ice cube trays. Then serve with a glass of water or iced tea!
- Make a minty Arnold Palmer. Serve with iced tea for a refreshing summer beverage.
- Spike it! This lemonade tastes great with vodka or sparkling wine. You can reduce the amount of water to create a more concentrated flavor.

While this beverage does contain sugar, it is a relatively low sugar lemonade recipe. In my opinion, a beverage like this is good for you in how it uplifts the spirits and brightens the day!
Typically 2-3 tablespoons. Six lemons should do the trick here, but if you notice you are getting less than 2 tablespoons from a lemon, it doesn't hurt to juice an extra one.
Yes. Muddle the mint and sugar with water or lemon juice, then add to a pitcher with remaining lemon juice and water and stir. Serve over ice.
No. It is best to serve the Mint Lemonade over ice so that the ice doesn't dilute the lemonade in the pitcher.
Storage
Store Mint Lemonade in the refrigerator for 3-4 days in a sealed pitcher. You can freeze this lemonade for up to 3 months! Store in freezer-friendly bags, sealing out the air, but also leaving a little extra room for expansion. Thaw in the fridge before serving.
