Servings: 6 cups
- 6 lemons juiced (save 2 halves, or one lemon), plus extra lemon slices for garnish
- 6 cups filtered water
- 1 ½ cups ice
- ½ cup sugar
- 20-30 mint leaves or one bunch, plus extra for garnish
Add lemon juice, two lemon halves (one juiced lemon), filtered water, ice, sugar, and mint leaves to blender. Blend on high for a minute or so, until a smooth liquid.
Pour into a pitcher, adding a couple lemon slices and extra mint leaves if desired.
Serve over ice with a lemon slice and mint leaf for garnish. Taste. If too sweet, you can always top with a little water or sparkling water!
- If you don't have a high speed blender, you can use a regular blender and then pour the liquid through a fine mesh strainer to catch any remnants of the lemon or mint. If you don't have a blender, muddle the mint and sugar with a little water or lemon juice, then add to a pitcher with remaining lemon and water. Stir and serve over ice.
