- Red potatoes: Or use any thin-skinned potatoes, baby potatoes, or gold potatoes.
- Avocado oil
- Garlic cloves: Peeled and minced.
- Fresh rosemary: Or sub dried.
- Spices: Italian seasoning, garlic powder, salt, and pepper.
- Fresh parsley: Minced, for garnish.
- Lemon: Cut into wedges for serving.
How to Make Crispy Air Fryer Red Potatoes
1. Preheat air fryer to 400F.


2. Prep the potatoes. Wash and dry the potatoes. Chop into quarters and toss in a large mixing bowl with oil, garlic, rosemary, and spices. Mix.

3. Fry. Add potatoes to the air fryer basket and spread them out. Cook until golden brown, about 25 minutes (some air fryers may only take 10-15 minutes). Shake the basket halfway through cooking.

4. Prep garnishes. While the potatoes are frying, mince the parsley and cut the lemon into wedges.
5. Serve. Serve the potatoes immediately with fresh parsley and lemon juice. Serve with ketchup if desired, or any dipping sauce!

How Long to Cook Red Potatoes in the Air Fryer
Using the Instant Pot Pro Crisp, my red potatoes require 25 minutes. Every air fryer is different, so check your potatoes every 5-8 minutes or so. Some air fryers may only require 10-15 minutes of cook time. Regardless of cook time, you'll want to shake the basket or stir the potatoes halfway through frying.
The good news is, once you try this recipe the first time, you'll have a good idea of how much time you need to cook the potatoes for the future!
Recipe Variations
- Switch up your spices! Instead of Italian seasoning and garlic powder, use herbes de Provence, onion powder, dried rosemary, or chili flakes, or even cumin, paprika, turmeric, curry powder, or garam masala.
- Try other herbs. Instead of fresh rosemary, you could fry the potatoes with thyme or tarragon. You could also garnish with fresh dill or parsley.
- Use different potatoes. This recipe also works with any type of thin-skinned potatoes, baby potatoes, or Yukon gold potatoes.
Chef Tips
- Don't overcrowd the air fryer basket. Leave space between the potatoes to ensure they get crispy. You may have to fry the potatoes in more than one batch.
- Don't forget to shake the basket halfway! Halfway through cook time, shake or stir the potatoes.
- Serve immediately. These are best enjoyed right away! Or, keep them warm in a 275F oven.

Yes! Simply preheat your oven to 425F, season as instructed (perhaps using a touch more oil) and roast for 30-40 minutes, watching them carefully with the oven light on. All ovens cook differently!
After washing the potatoes, make sure to dry them well. Leave some space in between the potatoes while frying. You may have to cook these in batches if your air fryer basket is on the smaller side.
This could be because they were in the air fryer too long. Remember that all air fryers cook a little differently. Check them every 5-8 minutes or so if you are unsure about how long potatoes take to cook in your particular air fryer.
Using the air fryer is a healthier way to enjoy potatoes because less oil is needed. Fiber-rich red potatoes are packed with vitamins, minerals, and antioxidants, and are even more nutrient-dense with the skins left on!
Nope! Simply cut into quarters, toss with oil and seasonings, and then add to the air fryer.

These potatoes are best enjoyed immediately, however you can toss them back into the air fryer for a few minutes to reheat just before serving, or you can keep them warm in the oven at 275F.
