Savory and aromatic Caramelized Onion Mushroom Toast is a filling and quick vegan meal that can be enjoyed for breakfast, lunch, or dinner. Served over seasoned, crunchy sourdough and topped with crisp radish and nutritious sprouts.

When I was in college, I always looked forward to driving home on the weekends and enjoying one of my favorite meals my dad used to prepare: sautéed mushrooms. He made my two favorite dishes every time I arrived home—mushrooms sautéed with herbs and a crunchy tomato cucumber salad. I usually enjoyed the mushrooms with toast to make it into a meal, forgoing the steak—though I've been told he made them better than anyone! This Caramelized Onion Mushroom Toast is inspired by these recipes that make me nostalgic for home.
