Caramelized Onion Mushroom Toast

Savory and aromatic Caramelized Onion Mushroom Toast is a filling and quick vegan meal that can be enjoyed for breakfast, lunch, or dinner. Served over seasoned, crunchy sourdough and topped with crisp radish and nutritious sprouts.

Ingredients

  • 2 tablespoons olive oil plus extra for brushing the bread
  • 1 pound red onion about one large onion, thinly sliced
  • 5 cloves garlic minced
  • 2 cups chopped or torn mushrooms oyster, porcini, morel, enoki, chanterelles, pioppino, shiitake, or button mushrooms
  • 2 tablespoons mirin
  • ½ teaspoon salt plus extra for seasoning the bread
  • ¼ teaspoon black pepper plus extra for seasoning the bread
  • 1 tablespoon fresh parsley roughly chopped
  • 6 slices baguette or sourdough
  • Sliced radishes optional
  • Sprouts optional

Instructions

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Once warm, add sliced onions and sauté for 10 minutes. When you start to see browning, add the remaining 1 tablespoon of oil.
  • Add mushrooms to the pan and sauté for 3 minutes.
  • Add minced garlic to the pan, mix, and stir in mirin, salt, and black pepper. Reduce the heat and cook for a few more minutes until the garlic is fragrant and golden.
  • Turn off the heat and add parsley, gently stirring it in.
  • Brush each slice of bread with olive oil and season each with a little salt and pepper. Place in the oven or toaster oven until desired crispiness.
  • Top each piece of toast with the caramelized onion mushroom mix and garnish with sliced radishes and sprouts if desired.
